Use of the high pressure technology for the safe production of quality optimized fresh and convenience products of prolonged shelf life. A very promising approach for the production of such products can be seen in the new possibilities of the high pressure technology. Already today food can be microbial deconta-minated at short compression times and pressures more than 7000 bar whereas the valuable contents, such as vitamins, which are mostly destroyed in thermal processing, remain unchanged. Since furthermore the high pressure technology offers the possibility for sanitation in the final packing, all recontamination possibly dangerous for consumers can be excluded. Many questions on interaction effects between process parameters, food contents, structure, quality, durability and packing materials are still unsolved, though. This shall be analysed basically. By close cooperation of research and industrial partners the scientific base shall be worked out for the high pressure induced events in the food and then exploited in the develop-ment of modern high pressure engineering systems. A main topic of the project will represent the high pressure treatment of packed food and therefore the development of new packaging. The project shall meet the demand for highest product safety and quality in connection with prolonged shelf life.
