Description:

Milk and whey are concentrated in large volumes and further dried to powders using enormous amounts of enery. When used, they are again dissolved. If the drying process could be avoided and the concentrates would instead be used directly, we could save as much as 1000 GWh/a in Germany alone. Non-persihable concentrates will also be functionally superior over powders as they are ready for use and come without the quality problems of powders such as clumping and redispergation issues. The objective is thus to develop innovative methods for stabilizing concentrates and new forms of logistics, such that the concentrates can be transported and stored like powders, i.e for a sufficient time and under similar ambient temperatures. In an interdisciplinary approach we will also investigate the required changes in logistics and in subsequent processing and evaluate the concept as a whole with regard to its cost-effectiveness and sustainability. Finally, all processing steps along the supply chain are validated through an assessment stage at industrial scale. The project is divided into 7 work packages treated by 4 partners: WP 1 Concentration: thermal and membrane processes - WP 2 Storage behaviour of concentrates - WP 3 Scale-up of processes - WP 4 Market requirements / logistics technologies - WP 5 Modelling of the costs effectiveness of the supply chain - WP 6 Evaluation of climate efficiency and sustainability - WP 7 Integrative methodology.
