Identification of proteomic biomarkers in human after exposure to furan fatty acids

Description:

Furan fatty acids (FFA) are oxidation products of unsaturated fatty acids and result from thermal treatment of food containing fatty acids. Beside FFAs are found naturally in fish oil and plants. There’s a lack of data concerning the effects of furan fatty acids in human. Our recent in vitro studies had indicated genetic toxicity and cytotoxic activity. It is planned to show genetic toxicity and cytotoxicity in human models of the small intestine (Caco-2 cell line) in detail. To identify biomarkers of the molecular effects of FFAs on the intestine, it is subsequently planned to make a new proteomic-approach. The aim of this project is to define the cellular and molecular signalling pathways for risk assessment of e.g. thermal treated food or novel food and therefore to identify biomarkers.
