Storage of deep frozen meat with special regard to human health and quality aspects

Description:

During recent years meat was detected in cold stores by official control activities which did not satisfy quality requirements (?Gammelfleisch?). At the same time a discussion started about health aspect of stored meat beyond their shelf life. Although many scientific aspects concerning cold storage of meat have been investigated in the last decades newly preservation methods such as the addition of protective gas and quick freezing schemes have been developed to prevent quality losses of meat. Food safety aspects have attract only minor attention. Critical control points for deep frozen meat are urgent needed to control the freezing process and parameters to assess the wholesomeness of frozen meat.
