The influence of different kinds of Barrique wine production on the content of polycyclic hydrocarbons in wine
Description:
Little is known about the content of polycyclic hydrocarbons in wine. Although they have a very low water solubility, compounds of this kind are also found in wine even if their concentration is fairly close to the detection limit. In the context of risk assessment, a study on the possible hazardous effects of Barrique wine with special regard to the influence of the applied winery techniques (comparing classical wine production with barrels, use of chips) would be for the public benefit.
