The aim of this research project is a practical analysis of small-scale processing conditions in the small holdings and the resulting quality problems as a prerequisite for the creation of a specific guide to action. The proposed project is the continuation of the project 'organic trout' begun work to improve the competitiveness of organically produced trout. During the first project, a comparison of the holder of the living conditions and fresh trout from different commercial farms occurred, stand in this project the demands on the quality of the products in the foreground.
