Purpose of research: Applied research
The aim of the study is the evaluation of different chicken breeds to assess the potential selection criteria for poultry breeding in organic farming in terms of the suitability of dual purpose breeds (egg and meat production). Investigation of carcass composition and selected meat quality parameters incl. sensory criteria.
The breeds investigated differed in carcass weight, depending on fattening periods. These differences largely levelled out in percentages of carcass parts, with the exception of the reference breed ISA. In the breast parts, the tissue proportions were similar between the test groups. ISA stood out from the other breeds with heavy muscling of breasts. Some differences in physicochemical criteria could be found between the experimental groups. Overall, in the breast meat, the results indicated a physiological process of post-mortem glycolysis. The characteristics of colour and waterholding capacity were comparable to other studies. In the sensory analysis, some breeds scored better for tenderness or for flavour and overall impression. The results of the study may contribute to characterise the carcass quality of males in the breeds investigated. Thereby, suitable selection criteria could be derived for an organic breeding program in consideration of dual-purpose chickens.
