Purpose of research: Inventory & Assessment

The assessment of the risk of Campylobacteriosis due to consumption of chicken meat has to be done in Germany according to the international recommended procedure of quantitative microbiological risk assessment (QRA). The concept of the QRA has been elaborated in the international framework of Codex Alimentarius and is based on a systematically approach for estimation of the risk of foodborne infections. All scientific data necessary for the four steps of the microbiological risk assessment have to be integrated in the models along the Farm-To-Fork-Continuum of broiler production and consumption of chicken meat. Therefore, all informations and activities in Germany regarding the disease of Campylobacteriosis, the broiler production and the Campylobacter contamination along the food chain as well as consumption pattern in Germany and consumer behaviour in the households have to be considered. This comprehensive framework has a pilot character and will be one of the first attempts of QRA in Germany. The project is part of an integrated project led by the Robert-Koch-Institut and is funded by the Ministry of Education and Research.
