Project code: 2819102813
Contract period: 01.09.2014 - 01.05.2018
Budget: 955,479 Euro
Purpose of research: Experimental development
Keywords: food technology, food engineering, poison, toxins, food safety, process quality, processing, food processing, medicinal plants and spices, product safety

In principle, the use of cold atmospheric pressure plasma enables the inactivation of microorganisms at low temperatures. Within the framework of the research project "3Plas", a close cooperation of research institutions (ATB, INP) and industrial partners (Theilen Maschinenbau GmbH, First Sensor AG, Cziotec GmbH) successfully demonstrated a scale-up for the use of innovative plasma applications for increasing the safety of dry products. On a pilot scale, the plasma application combined with fluidized bed drying was realized. Using wheat samples as an example, the application of cold plasma was able to inactivate e.g. spore-forming bacteria. Additionally and in cooperation with the Max Rubner Institute (MRI), no indications of cytotoxic, genotoxic or mutagenic properties of the treated products were found, even if using very intensive treatment parameters. For the first time, it was possible to carry out investigations regarding product safety, which underline a possible market implementation.
