The proposed collaborative project aims to develop drinking yoghurt variants for A) pregnant and lactating women and B) kindergarten and school children, adapted to their special needs. The products will be enriched with valuable long-chain polyunsaturated n-3 fatty acids (n-3 LC PUFA), which can be naturally taken up only with high-fat cold-water fishes and seaweeds. The n-3 LC-PUFA are important structural components of all cell membranes, with the highest concentrations in brain lipids as well as the retina of our eyes. Furthermore, the intake of n-3 LC-PUFA correlates inversely with the incidence of cardiovascular events as well as cardiovascular risk factors.
