Because of the requirements of reliable risk assessment, it's intended in this project to prepare the data (compound foods including recipes, convenience food and brand products) from the KiESEL study. The food data are going to be processed into individual, original components so, besides the calculation of food and nutrient intake, it's possible for the BfR to carry out evaluations regarding harmful substances, i.e. pesticides. For the Paderborn University same can be done for food additives. For this purpose, prepared and compound (convenience) foods are broken down step by step into their final individual ingredients. A stepwise approach is assuring a high transparency during the procession of the data, delivering all yield factors. In addition to that, descriptors determining the method of processing are assigned to the individual variables. Descriptors are: raw, processed, juice, dry product, oil, shell or distillate.
