Innovative beverages and variations of beverages are increasingly determining the German beverage market. Personal lifestyles, the trend towards high-quality food as well as increased health consciousness are shaping the drinking patterns in Germany as well as the desire for regional products. In the future, a growth of this segment has been forecasted. While the consumption of alcoholic beers in Germany has declined rapidly for years, the consumption of non-alcoholic beers has increased sharply. This is where the wine industry must make a conscious start. While non-alcoholic sparkling wine has been popular for a few years, there has been an increasing demand for low-alcohol or non-alcoholic wines in the past. Wine producers in Baden-Württemberg have recently addressed this issue. However, corresponding innovations have been missing so far. The project aims to develop primarily low-alcohol and non-alcoholic wine products. In addition, the market opportunities of these products will be investigated and in order to build a bridge between practice and research, product positioning models, successful market launch and marketing will be developed.
