Purpose of research: Applied research

Until now, the data collected with validated analytical methods for acrylamide have not been sufficient but are required for the health evaluation and to take measures for risk reduction by establishing maximum levels for food control. Furthermore food is examined for contamination with other foodborne toxicants (e.g. 3-MCPD esters) to evaluate the consumer risk regarding this group of substances.

The analytical methods presently available for acrylamide are classified as suitable (demonstrated by laboratory profociency tests) for simple food matrices like crispbread and cookies. For more complex food matrices like coffee and cocoa more effective analytical methods were developed at the BfR. One method for complex foods using activated charcoal for clean up was completely validated. For the determination of the carry over of acrylamide provocation studies were carried out with cows and hens. The studies showed a carry over of acrylamid from feed into milk of about 0.02% and into eggs of about 0.2% respectively. Furthermore a proficiency testing system was established to provide analytical quality of the official laboratories for food control. These efforts will be continued and extended.
