One of the most important challenges the modern world is facing is food insecurity, while little progress has been achieved at introducing non-destructive and reliable food quality assesment methods at both pre- and post-harvest stages. SPECTROFOOD develops digital technology solutions for the agri-food value chain, combining innovative Hyperspectral Imaging Systems, Artificial Intelligence techniques, analytic tools, and data platform – related solutions. This will identify temporal and spatial relations between production practices and quality characteristics in post-harvest and storage. The collected data and generated relations will be stored in an user-friendly and interactive platform for four use-cases. Cases were identified in four countries to monitor leeks, mushrooms, sweet cherries and apples, as well as broccoli. The project results will be communicated, disseminated and exploited by the project partners, while the specific needs to be monitored will be identified with close cooperation with the relevant stakeholders, which have been identified to be farmers, food processors, retailers and consumers. At ATB the waste reduction in the fruit suppply chain will be approached. Apple and sweet cherry will be monitored by means of hyperspectral imaging, a method that became recently available for fast analyses of indoor and field conditions. To discover the potential of the method, it will be applied in the field on the tree, indoor during storage and shelf life, and on sorting lines. Experiments capture the three scenario aimed at identifying the economically reasonable applications. The application prototypes will be dissiminated to the stakeholders. Additionally, ATB will be responsible for the experimental design, validation protocols, and communications in the applications studied by all partners of SPECTROFOOD capturing supply chains of leeks, mushrooms and broccoli additionally to the fruits.
