Purpose of research: Applied research
Aim of the research plan is to clear in which extend masked mycotoxins like glycosides of the Zearalenone are an additional potential risk for the consumer. ; ; Masked mycotoxins are relevant because for example glykosides can be hydrolysed into the active mykotoxins and the free sugar in the stomach. So the overall exposition of the consumer is the sum of the free mycotoxins and the masked mykotoxins. But masked mycotoxins are not detected by conventional analytical methods at present.
