Purpose of research: Applied research

During refinement of plant oil, used since beginning of the 20th century, fatty acid esters of3-monochloropropanediol (3-MCDP) and glycidol are formed as heat-generated foodtoxicants, as discovered recently. Due to its genotoxic and cancerogenic properties as anepoxide, especially an exposure to glycidol would be critical. However, several questionsregarding kinetic aspects are unsolved (degree of hydrolysis during digestion? bioavailabilityas unbound glycidol?), which makes a risk assessment difficult due to several uncertainties(BfR 2009). A detection of haemoglobin adducts of glycidol in humans exposed to glycidolfatty acid esters would be an important indication that relevant amounts of the substance actas glycidol in the body following oral intake of refined plant oils and fats. This would becritical especially in case of formula-fed infants, as the fat of formula is composed of refinedplant oils only, as demand of fat is highest on a body weight basis during the first months of age, and as a risk of cancer would be unacceptable especially for the very young.
