Purpose of research: Experimental development
The influence of stressful conditions during transport and at the abattoir is discussed as reasons for an increased percentage of carcasses with off odour. Therefore consequences of pre-slaughter treatment of entire male pigs on androstenone, skatole and indole formation and their concentrations in adipose tissue are investigated. Skatole, indole and androstenone concentrations are measured in blood, adipose tissue, and drip from meat samples of boars of the same genotype slaughtered in two abattoirs, which differ in the average percentage of boar tainted carcasses. Skatole formation is characterized by faecal measurements. Additionally endocrine parameter and animal behaviour are evaluated to determine the influence of differences pre-slaughter treatments on compounds contributing to off odour in carcasses of entire males. Additionally, the effect of various steps along meat processing or sausage production on skatole and androstenone are determined to optimize the processing of tainted carcasses. Samples from 48 boars are collected at two abattoirs. Skatole and indole measurements are carried out by HPLC, androstenone is determined by EIA, further endocrine parameters are measured by RIA. All three substances are determined in carcasses before processing to create specific lots. The final products are also analysed immediately after production and after the recommended best-before-date has expired. Specific steps along processing should be identified, which reduce off odour.
