Purpose of research: Experimental development
Aim of the project is the development of an innovative optical measurement method for the assessment of quality attributes of doner meat along the processing chain based on the combined determination of reflectance and fluorescence spectra. By means of novel combined spectroscopic measurements, chemometric evaluation and correlated reference analyses relevant quality indicators will be derived to enable the prediction of e.g. composition, tenderness and water-binding-capacity of beef. The obtained methods for the determination of meat quality are supposed to be transferred into a portable optical device allowing the mobile determination of meat quality along the production chain.
