The addition of up to 3% of the tannin containing plant extracts quebracho (Schinopsis balansae) or mimosa (Acacia mearnsii) at ensiling of lucerne or perennial ryegrass neither does influence the fermentation success nor the aerobic stability of silages. Both additives restrict-ed the degradation of true protein linearly when the concentration increased from 0.5 to 3% of DM. The additives Amasil NA, BIO-SIL and tannins limit the proteolysis and the formation of undesired metabolites even in very low dry matter ranges and allow the production of high quality silages. The tanniniferous additive did not impair the feed acceptance of ruminants. Organic matter digestibility of grass ensiled with 3% mimosa extract on DM base was depressed when fed to whethers. Protein digestibility was limited both in grass and lucerne when ensiled with mimosa. When quebracho was added at 3.8% of DM there was no impact on digestibility. Feeding 6 kg DM of Lucerne ensiled with 3.8% quebracho to dairy cows did not change the feeding success. Only the milk urea content was reduced. An invitro method was developed to describe the extent and rate of ruminal protein degradation of silages resulting in reproducible results to replace the in situ method. Goats fed grass ensiled with 3% mimosa extract retained more nitrogen compared to the control group. Residual phenols were not found in crude milk produced from cows fed tannin containing silage.
