Purpose of research: Basic research
Sliced leafy salads, cut fruits and vegetable products are often microbiologically heavily contaminated and present a hygienic risk. A special problem is the potential presence of pathogenic bacteria like Listeria, B. cereus, Salmonella and Aeromonas. The aim of this work is to determine the actual hygienic status of different vegetable products. The presence of pathogens and the multiplication of these on ready-to-eat and fresh vegetables will be investigated. The influence of various storage temperatures and treatments on the microbiological quality of the products will be particularly examined.
