Sustainable improvement of food quality is the aim of this participative project . Dimension and causes of malnutrition are determined by a household survey, which is the basis for the development of means of intervention to increase food availability and food utilization. Providing practical knowledge in the field of food diversity, meal preparation, hygiene, storage and needs-based diet is a key element of Scale-N. A nutrition and health survey will be conducted as baseline data collection. Information on food consumption, preparation methods, food source and storage, as well as health-related parameters will be recorded. These data will be used for the development of intervention concepts as well as basic data set for assessing the success of the intervention. Losses of relevant micronutrients through storage, cooking processes and meal composition will be analyzed. This allows the development of vitamin conservative cooking methods and the enhancement of micronutrient bioavailability by modifying traditional dishes. An impact assessment is carried out by a second survey at the end of the project period, which is compared with the baseline survey.
