In accordance with the resolution of the 125th German Medical Assembly, the University Hospital Essen has set the goal of becoming climate-neutral and, as Germany's second-largest university hospital, assuming a pioneering role on the path to becoming a Green Hospital. A key component of this initiative is the adaptation of nutrition for all patients and staff to align with the recommendations of the German Nutrition Society (DGE) and the EAT-Lancet Commission’s Planetary Health Diet by 2027. This transition aims to sustainably promote health both for individuals and for the planet. In parallel, the hospital is committed to reducing food waste by 50% through the innovative use of new, AI-driven food technologies, in accordance with the National Strategy to Reduce Food Waste. AI will also be used to process personalised patient data to help predict and address malnutrition by adapting nutritional strategies. Another goal is the development of a regional supplier network and the implementation of nutrition communication and education measures on-site. Finally, a guideline with evidence-based recommendations will be developed and published, facilitating other hospitals and communal catering services in successfully implementing similar transformation processes.
