The demands on our diet are becoming increasingly diverse. The focus is no longer only on health aspects such as a complete diet and a healthy body weight, but also on how our food affects the environment. The aim of this research project is to evaluate and improve the school meals provided by a school canteen according to nutritional, sensory and ecological criteria, taking into account the economic framework conditions, using a comprehensive approach to improve the value chain. The aim is to reach all children as early as possible and in a targeted manner. Since the majority of children in primary schools still take part in communal meals, and as this phase of life is crucial for behaviour and eating habits, the project will focus on this group. School meals can be seen as part of informal nutrition education. Therefore, the project also plans to involve those responsible for these institutions. One focus of the project is to involve all stakeholders in the adaptation process, including the pupils and the people who look after them at school. In most cases this will be the staff of the after-school programme. The adaptation of school meals not only serves to improve the food offered with a view to sustainable nutrition in the school environment, but also has a multiplier and synergy effect on the private diets of pupils and carers. Regular meetings with the pupils, their carers and the school catering staff enable the quality of the school meals to be improved in a way that is close to the real-life experiences of the people involved.
