Despite their proven cultivation and baking properties, heterogeneous wheat populations have not yet found their way into the food sector. Within the framework of the BAKWERT project, organic value chains consisting of farms, mills and bakeries will be established in three regional clusters. Two heterogeneous winter wheat populations, as well as a reference variety will be utilized in the regional value chains within each cluster in order to identify and evaluate factors along the entire value chain that are relevant for the acceptance of heterogeneous wheat populations. The project aim is to promote the cultivation, processing and marketing of wheat populations through a holistic research approach. Qualitative interviews with the various actors and participative methods, workshops and field days, as well as on-farm trials serve as a research basis into the value chains. Independent analyses will be carried out by the Institut für Getreideverarbeitung GmbH to ensure a comprehensive evaluation of baking quality, milling and baking properties of heterogeneous populations in comparison to the reference variety. Based on the collected data, each stage along the value chains from cultivation, to milling and baking processes will be analysed for optimization potential using a multi-actor process. The final results will be made available in a 'Population Handbook' and 'Population Film'; produced from participatory videos. Furthermore, all (intermediate) results and further information will be available on the project website. The project will be coordinated by the Department of Farm Management at the University of Kassel. Additional partners include the Department of Organic Plant Protection (University of Kassel), the LTZ at the Competence Centre of Organic Agriculture Baden-Württemberg (KÖLBW) and in co-operation with Die Freien Bäcker e.V.
