Lebensmittel enthalten teilweise relative hohe Mengen antinutritiver Faktoren. Diese können z.B. die Resorption von Mineralstoffen und Spurenelementen behindern und so unter Umständen zu Mineralstoffmangelerscheinungen beitragen. Einige der antinutritiven Faktoren sind chemisch und thermisch stabil, so dass sie die Lebensmittelverarbeitung überstehen. Mit Hilfe von Enzymen lässt sich der Gehalt an antinutritiven Faktoren unter milden Bedingungen reduzieren ohne andere Lebensmittelinhaltsstoffe zu beeinflussen.

Die enzymatische Reduktion antinutritiver Faktoren während der Lebensmittelverarbeitung wurde am Beispiel von Phytat untersucht. Phytat kommt in allen Lebensmitteln pflanzlichen Ursprungs vor und reduziert die Verfügbarkeit von Mineralstoffen und Spurenelementen. Es wurden zahlreiche phytat-abbauende Enzyme charakterisiert und zur Phytatreduktion eingesetzt.
