Authenticity of meat with stable-isotope technique

Description:

Feed and drinking water of animals as a function of composition and geographical origin show a specific ratio of stable isotopes of the elements hydrogen, carbon, nitrogen, oxygen, sulfur and strontium. It is intended to explore how these ratios reflect in the different tissue types and classes of chemical compounds respectively and how fast the equilibration of the isotope ratios proceeds after a change in feed materials. The intention is the development of a practical stable isotope method (in analogy to the determination of origin of some plant foodstuffs) for the determination of the geographical origin of meat by comparing the isotope ratios with the regional situation or a data base. Furthermore it is intended to examine, to what extend additions of maize, which is unwanted in organic farming or even of meat meal can be discovered.
