Metabolomics ist die qualitative und/oder quantitative Analyse des Metaboloms, d. h. aller Komponenten in einem biologischen System mit einem niedrigen molekularen Gewicht. Das Metabolom setzt sich sowohl aus endogenen (vom Körper produzierten) als auch exogenen (aus der Nahrung oder aus anderen Umweltquellen) Metaboliten zusammen. Das Metabolom wird von unterschiedlichen Faktoren, u. a. Geschlecht, Alter, Ernährung, körperliche Betätigung etc. beeinflusst. Das Ziel in der Ernährungsforschung ist es Biomarker zu identifizieren, die Aussagen zum Erkrankungsrisiko in Abhängigkeit vom Ernährungsmuster ermöglichen. Beim aktuellen Projekt verwendet das Max Rubner Institut die Metabolomics-Technologie dazu das Metabolom eines gesunden Menschen vollständig zu charakterisieren. Verschiedene Chromatographie-gekoppelte massenspektrometrische Techologien als auch Kernspinresonanz (NMR) werden eingesetzt um Plasma-, Serum- und Urin-Proben der Probanden zu analysieren. Unter Einsatz von Bioinformatik werden Metaboliten oder Metabolitenmuster bestimmt, die sowohl für das Geschlecht, das Alter sowie die Ernährung der untersuchten Studiengruppen charakteristisch sind. Parallel hierzu wird das Ernährungsverhalten der Probanden bewertet um Metaboliten zu identifizieren, die typisch für bestimmte Ernährungsmuster sind. Das endgültige Ziel ist es das Ernährungsverhalten und das metabolische Profil eines Individuums einzuordnen um geeignete Maßnahmen zur Erhaltung der Gesundheit und zur Prävention bei der Entstehung von ernährungsmitbedingten Krankheiten zu ergreifen.
