Reformulation – fat reduction in deep-fat fried bakery products (Project)

...The project includes three different strategies, which are applicable at low cost and / or adaptable from other types of food: 1) physical modification of flour, 2) application of additives and 3) coating with hydrocolloids. ...In the first step a method to observe the fat migration will be established and the standard recipe will be characterized (AP 1). Afterwards, the water binding of the flour will be increased by physical modifications, so that the oil uptake will be reduced (AP 2-4). The same mechanism applies when part of the flour is replaced by water-binding additives (AP 3-6). A different approach is to apply a hydrocolloid coating to reduce the water evaporation and hence oil absorption post-frying (AP 7-9). ...

Development of a molecular diagnostic for sustainable and resource-efficient production of the renewable resource potato starch. Subproject 4 (Project)

...The following results have been achieved in the reporting period: WP1 Development of molecular markers for resistance to pathotypes 1,2,6,18: Extensive resistance tests were performed for the following groups of material: a) Potato varieties with known resistance spectrum: The inoculum for the tests of 47 varieties with multiple resistance, 50 varieties with P1 resistance, 50 varieties with P1 susceptibility and 80 wild species with unknown resistance or susceptibility to potato wart disease was increased for all four pathotypes (in total 15,900 warts). b) Segregating populations: 24 genotypes were infected with pathotype 1 and 18 genotypes with P18, seedling tissue was taken after 2, 7, 14 and 21 days and frozen, then shipped to partner LUH. c) Crossing populations with other donors of resistance: The parents of each crossing populations were tested with all four pathotypes (588 tubers). 150 genotypes of the population Panda x L04 were tested with 20 tubers on pathotype 18 and the distribution of the means was calculated. WP 3+4: Identification of candidate genes by proteom analysis of the infection course and mechanism of infestation course: JKI (AG Flath) has provided the partner LUH with P18 infected tuber material at regular intervals. ...WP 3+4: Identification of candidate genes by proteom analysis of the infection course and mechanism of infestation course: JKI has provided the LUH with P18 and P1 infected tuber material at regular intervals. ...

ENDURE - European Network for the Durable Exploitation of crop protection strategies (Project)

...The overall objective of ENDURE is to: (1) restructure European research and development effort on the use of plant protection products, (2) establish the new entity as a world leader of development and implementation of durable pest control strategies. ...The operational and structural objectives of ENDURE are: [1] To overcome fragmentation in crop protection research and development within Europe through the design and implementation of a joint programme of research on crop protection as well as through the creation of a virtual crop-pest control laboratory [2] To reinforce the R&D capacities needed in Europe to improve the basic understanding of the crop pest systems and develop durable pest control strategies [3] T o progress towards a trans-national entity aimed at reducing pesticides inputs by encouraging durable integration of the leading European crop protection institutions, forming the nucleus of excellence around and from which institutions and researchers can integrate their activities [4] To create a European centre of reference for supporting public policy-makers, regulatory bodies, stakeholders and extension services [5] To increase mobility of researchers and co-operative use of facilities, equipment and t ools [6] To ensure the spreading of excellence and support training to facilitate the adoption of safer and environmentally friendly crop protection approaches ENDURE brings together the leading crop protection institutions, the worldwide association of bi ocontrol industries (IBMA) and benefits from the support of the European Crop Protection Association (ECPA) to built a world leading network for the development of durable pest control strategies....

Nutrition and the microbial population of the digestive tract: (a) probiotic bacteria in nutrition and stabilisation of the gastro-intestinal tract; (b) modulation of metabolism by lactic acid bacteria; (c) functionality of probiotic strains (Project)

...Objectives are: 1) investigations of the role and contribution of probiotic lactic acid bacteria to the stabilisation of the intestinal tract by using of in-vitro and in-vivo model systems. 2) exploring the restoration of the normal micropopulation following intestinal disturbances / dysbiosis (e.g. treatment with antibiotics). 3) informations on the metabolic properties and functional properties of intestinal lactic acid bacteria (such as adhesion on intestinal epithelial cells and extracellular matrix proteins, induction of cytokines etc.). - Njeru, P.N., Rösch, N., Ghadimi, D., Geis, A., Bockelmann, W., de Vrese, M., Schrezenmeir J. and Heller, K.J. 2010. Collaborative Project: Development of an allergen containing test-biscuit for special feeding of babys - the feeding kiss - subproject A (Project)

...The proposal addresses different areas (medical, analytics, process – and consumer-orientated), with following key points: 1. Clinical explorative study (exploration of special eating habits focusing on immunological/allergological and dental-preventiv aspects): Introduction of an allergen-containing "test-biscuit" with defined allergen amount in baby foods following special eating habits "feeding kiss" 2. Development and production of a "test-biscuit" by the bakery, combined with subsequent analytical validation (point 3) 3. Qualitative and quantitative analytical verification of the "test-biscuit" from point 1 and 2 via allergen-specific ELISA, including validation of the allergenic potency via cellular test, as well as development, validation and transfer of rapid tests for allergens by considering relevant matrix effects. 4. Consumer preference and communication: analysis of acceptance of the (new/different) eating habit, as well as allergen-management and allergen-labeling of traces in view of allergic consumers 5. Development and validation of diagnostic methods: analyses of changes of the oral microbiome through different feeding habits while introducing solids (including differences induced by "feeding kiss"); additional analysis of skin and stool samples...
