Assembly and optimisation of a model system for separation of low molecular digestion products and food constituents by passive diffusion through artificial membranes (Project)
Examination of the influence of different matrices on the diffusion behaviour of low molecular digestion products and (unwanted) food constituents after digestion. For this purpose different protein-, fat- and starch-containing real and model foods are being chemically-enzymatically digested and the diffusion of constituents is investigated after the chyme is treated with pancreas enzyme and bile.

A controlled study was started in 2001 to characterise the PBDE levels in human milk from Germany and to verify potential factors influencing PBDE levels. Two main hypotheses were proposed: 1) PBDE levels may be higher in milk fromm mothers who consume food of animal origin than in milk from mothers who do not. 2) PBDE levels in human mild may decrease during the period of breast feeding.
