...The aim of the research project is the nutritional evaluation of the acute (Human Study 1) and chronic (Human Study 2) effects of a legume-rich diet in the dietary pattern approach (Planetary Health Concept), compared to a Western diet, in individuals with risk factors for cardiovascular and neurodegenerative diseases. Both studies will provide compelling scientific evidence for the health-promoting effects of a legume-rich dietary pattern. Via Study 1, we aim to determine whether a legume-rich, plant-based meal can already have acute positive effects on the magnitude and duration of postprandial metabolic processes. Assessment of the legume-rich meal will be based on a wide range of physiological parameters as well as neuropsychological outcome measures. Study 2 will examine the longer-term effects of a legume-rich, plant-based diet compared to a Western dietary pattern. ...
