Investigation of the formation of mycotoxins by Alternaria alternata on various plant-based foods (Project)

...Baby food is also regularly affected.The present project will use a multidisciplinary approach to clarify important research questions and thus expand the database for better risk assessment and sound policy advice on this topic: 1) Investigation of the formation of mycotoxins on plant foods by Alternaria fungi and their metabolism (also by the plant); 2) Determination of the direct interaction between Alternaria fungi and plant-based food (infection process), also by means of electron microscopy; 3) Assessment of the health relevance of an infestation by Alternaria fungi, which are particularly common in plant-based foods, on the basis of new and detailed data on genome analysis; 4) Development of targeted and sustainable antifungal strategies against infestation of plant-based foods by Alternaria fungi;  ...
