Metabolomics is the qualitative and/or quantitative analysis of the metabolome, i.e. all low molecular weight compounds, in a biological system. The metabolome is composed of endogenous (produced by the body) as well as exogenous (from food or other environmental sources) metabolites, and is influenced by a number of factors, including gender, age, nutrition, physical activity etc. In nutrition research, the aim is to identify biomarkers that guide measures to prevent the onset of disease and relate those markers to dietary patterns. In the present project, the Max Rubner-Institut will use metabolomics to thoroughly characterize healthy human volunteers. Various chromatography-coupled mass spectrometric techniques as well as nuclear magnetic resonance (NMR) will be used to analyze plasma, serum, and urine samples of these volunteers. Using the appropriate bioinformatic techniques, metabolites or metabolite patterns that are characteristic for the studied gender or age groups as well as the variability of selected metabolite groups will be determined. Parallel to that, the nutritional behavior of the volunteers will be assessed in order to identify metabolites that are representative of certain dietary patterns. The ultimate goal will be to integrate the nutritional behavior with the metabolic profile of an individual to be able to take appropriate measures to maintain health and prevent the development of diet-associated diseases.
