Healthy cereal species such as emmer, einkorn wheat, spellt and rye (healthy minor cereals) play a minor role in supplying the world's population with cereal. Their share of the world's cereal productions lies at less than 1.3%, in addition to the so-called main cereal species: wheat, rice, corn, representing almost 90% of the total harvest volume. Nevertheless, precisely these cereal species are important to humans who depend on alternative cereal species due to cereal intolerances or allergies.
