Description
The chair of hygiene and technology of milk is responsible for teaching all aspects of milk hygiene, including an microbiological training programme and services for the dairy industries. The chair consists of 4 working groups specialized in immunochemical methodology, food microbiology, residue analysis and cell-culture methods. Besides the permanent staff, additional personnel are paid by governmental and industrial funds. Extensive expertise is available on the production of poly- and monoclonal antibodies, and the development of immunochemical methods.

- Development of a Biosensorarrays for rapid determination of mycotoxins in cereals
- Development of a rapid biose sorarray for online determination of antimicrobial compounds in raw milk
- Establishment of a risk-based diagnostics for enteropathogenic Bacillus cereus
- Hybridoma development and application of monoclonal antibodies
- Improve and validate the analysis for T-2 toxin and HT-2 toxin and occurrence of these mycotoxins in food in the German market

- Affinity enrichment of spores of Alicyclobacillus acidoterrestris, A. acidiphilus and A. herbarius from economically relevant juices and juice concentrates for quality control in routine operation
- Detection and control of Mycobacterium avium subsp. paratuberculosis to ensure product quality in milk processing establishments
- Enteric pathogens Bacillus cereus in food: identification and risk assessment
- Examination of efficiency of bleeding slaughter pigs on degree of bleeding out and meat quality
- Improve and validate the analysis for T-2 toxin and HT-2 toxin and occurrence of these mycotoxins in food in the German market
