Purpose of research: Experimental development

An increase in antibiotic resistances among bacterial pathogens such as Salmonella, Campylobacter, Staphylococcus and Escherichia coli is a world-wide problem. The high usage of antimicrobial substances in human and veterinary medicine, as well as in agriculture and aquaculture, leads to a selection and enrichment of antibiotic resistant microorganisms. Infection with such resistant bacteria leads to serious therapeutic problems. Antibiotic-resistant microorganisms can occur in raw milk, on meats and fruits and vegetables, or in meat or milk products. The possibility exists, that such resistant microorganisms can be transferred from Foods to humans. This project aims to determine the incidences of such bacteria in Foods and to develop strategies to minimise their occurrence in foods
