Purpose of research: Applied research
The aim of this project is to compare plant food from different production systems (conventional, organic) with regard to their content of phytochemicals. This will be done using in vitro systems as well as human intervention studies. All food products will be blinded and carotenoid content as well as antioxidative potential will be measured in vitro and in vivo.
