The anthocyanin or black carrot becomes globally seen in the next years more and more importance in the production and processing. In the framework of the project, basis-material will be developed for breeding new German anthocyanin carrots, by using old carrot varieties and landraces conserved in different international gene banks. Through the breeding of anthocyanin carrots that are adapted to the climatic conditions in Germany, the north-east-German agriculture will especially profit. The anthocyanin carrot is the ideal raw material to the development of colour-strong black carrot-juice-concentrates to use as colouring food. It lies fully with it in the consumer-trend to substitute of the artificial dyes above all in beverages and candies.
