Description
he Technology Unit has been working since 1992 in a new building hosting modern and well equipped laboratories and pilot plant facilities. Its objectives in terms of research are to participate in the development of the scientific understanding of complex food systems and their constitutive components, and the way they interact with the process during manufacturing.

- In vivo studies of the effects of probiotic micro-encapsulated probiotic bacteria in milk proteins
- Milk protein hydrogels: Milk protein hydrogels as carriers for bioactive substances: water-insoluble micro-capsule systems for stabilization and controlled release of ingredients from the bioakive bilberry
- Optimization of ultrafiltration performance and improvement of microbiological quality in the production of whey concentrates by upstream microfiltration (MF)

- Milk protein fractionation by microfiltration: Influence of diafiltration medium to cover layer formation, transmission and functionality of the protein fractions
