Purpose of research: Applied research
The nutritional physiological benefit of microalgae resp. processed foods based on microalgae as well as the possible risks for humans are the main objectives of this subproject. The processes of bioavailability (bioaccessibility, absorption) of nutrients from microalgae depending on the treatment/isolation (e.g. proteins, components of the lipid-fraction such as fatty acids, carotenoids) are to be investigated. The mechanisms of physiological effects as well as possible harmful effects (oxidative, cytotoxic, genotoxic) of microalgae will be considered. It is of particular interest to examine if nutrients from microalgae are suitable for human nutrition and whether they could contribute to human health as well as what aspects of safety have to be considered.
