The aim of this project is to establish a new Utilization option: the breeding of grass eating insects with the aim of providing high-quality animal proteins as an alternative to conventionally produced meat from mammals or poultry. In Saxony-Anhalt the grassland areas will continue to grow in the coming years. On the other hand, there is a drop in potential users: beef and sheep stocks are declining and new biogas plants are no longer being built. This it is to be expected that more and more grassland is only 'cultivated' according to the EU minimum requirements: once a year mowing and the growth stays on the area. This, however, also leads to the loss of species - only those species which are able to grow through the dense mulch layers are found.
