The goal of the proposed project 'reffiSchaf' is the development of a sustainable marketing concept for resource-efficient sheep farming and its exemplary implementation in a value chain in the Berlin-Brandenburg metropolitan region, taking into account whole-animal use in the area of carcass utilisation and meat production. In the case of sheep, large parts of the carcasses are not yet used for high-quality processing and thus food is wasted. In addition, in German supermarkets only special high-grade meat cuts such as lamb fillets are available. This project aims to generate practical knowledge for the sustainable utilisation of all meat parts and possible slaughter by-products for lamb, mutton and meat from parent animals. This serves to create socio-economically sustainable framework conditions for all value chain participants as a basis for future growth opportunities and an increase in the sales volume of small ruminant products. Perspective climate changes and associated changes in land use possibilities are included in the investigations, whereby a promising concept for organic sheep farming that can be realised in practice is developed. This is intended to open up or develop a market segment that can decouple itself from the price pressure on domestic products caused by imports from EU and third countries. Through the development of a sustainability standard by an accredited certification body, which is included in the research project, the consumer demand for transparency and regionality will be met, the large-scale market introduction also in the food retail trade will be prepared and a contribution to the preservation and improvement of sheep farming in Germany will be made.
