Purpose of research: Applied research
The project is a nationwide processing of data and expertise to management in the farm's own processing and marketing. Thus, a standardized system of analysis for planning and controlling operations will be developed that covers the main methods of processing and marketing of our farm. The project includes the contents of the management manual for organic farming (02OE485 project, now published as KTBL-band) and this adds to the practical areas of processing and marketing. In the area of processing information and operating metrics for the branches of meat processing and bakery are collected and compiled. This instruction branches are shown with all the essential production processes. Such production processes are for example Coarse and fine cutting, halves and parcel of marketing of beef, sausage manufacturing and processing of pork and other products in the production of different breads and pastries with different processing techniques. In the field of marketing data, information and indicators for the farm shop forms of marketing, sales and domestic market supply will be developed. Production are here for example Farm shops and markets with a range of different depth and width, with different size classes of market sales and household equipment and supplies for various models (eg Gemüseabo, order service with a single order). The data are as follows with data forms and Excel applications illustrated and edited: Branch of Settlement (shown data from recalculations of existing businesses, according to the DLG scheme 'The new line of business accounting') to the profit contribution; planning values (after for planning meaningful division into variable costs and fixed costs and overheads) as building blocks for planning.
