The collaborative research project 'SafeFresh' aims to develop a comprehensive hygienic concept to reduce the risk of the population of getting ill from pathogens in food. The dispersal and colonization behavior of microorganisms is studied fundamentally. To prevent or to identify and eliminate contamination, control and inactivation process for industrial processing of fresh, perishable foods are being developed.
