Pasture milk is advertised under aspects of animal welfare, landscape conservation, sustainability and a healthy human diet in order to increase added value. Therefore, methods for authenticating pasture milk are needed. Previous studies on the stable isotopes delta15N and delta13C and the content of alpha-linolenic acid showed little difference to conventional milk without the additional declaration "pasture", whereas organic milk had a composition that was distinguishable from conventional milk and pasture milk. In the meantime, the conditions for the production of pasture milk have been clarified and sometimes intensified: grazing on min. 120 (150) days per year for daily min. 6 hours.
In this project, current samples of pasture milk and conventional milk will be used to test whether the methods used so far (stable isotopes, fatty acids) and, in addition, the triglyceride pattern, meanwhile allow for a better differentiation of the mode of production. In order to improve the authentication, a multivariate analysis of the data or a differentiation between seasons may be needed. An extension of the analytical method spectrum may be provided in a follow-up project.
