Purpose of research: Experimental development
Fresh meat and in particular meat products can be falsified by the use of non-authorized food additives and ingredients. Against this background it is important to develop analytical methods in order to ensure a high safety and quality of meat products. After validation in ring trials, the developed methods should be made available for official food control agencies.
