Purpose of research: Applied research
The aim of the research project is to investigate the applicability of rapeseed oil based oleogels as frying media for deep-frying of French fries and boiled pastries. Therefore, several chemical, physical and sensory properties of oleogels and deep-fryed food will be analyzed.
