The project aims at improving the theoretical knowledge of practitioners for the production of organic meat and meat products without or with reduced levels of nitrite (NPS) is. The safe and technologically flawless production of meat and meat products with reduced content or without NPS requires customized manufacturing technologies and technical expertise. Compliance with certain parameters for individual production steps is a prerequisite for product quality and safety. Practitioners often lack this expertise, so that there is no possibility to produce high quality and safe food without or with a reduced amount of curing agents. The proposed guidelines are technological measures for managers in manufacturing firms and practical advice for users in the crafts. He will also serve as an information base for food control. The guide is published on www.oekolandbau.de and www.fibl.org. The distribution of a print version is carried at cost by the FiBL after the project period.
