As part of the project, the effects of the BMVBS funded demonstration project for the (partial) conversion of public canteens to organic products in two regions 'Szczecin Lagoon' and 'Südharz Kyffhäuser' are examined. Goal of this research project is to, statements regarding the suitability to meet such model projects as catalysts for sustainable regional development, particularly in outlying rural areas. are to be investigated the effects of the pilot project in order to strengthen regional value chains, development of new products and services and the stabilization of business. It should also be considered to what extent the conversion to organic products in the canteens and contributes to an increase in quality promotion at the customer's health and regional awareness.
