Purpose of research: Applied research
The water uptake of poultry meat may be affected technologically. Hence, common threshold values for the unavoidable water uptake of carcasses and cuts were set by the EU. These are controlled by the federal states (Bundesländer). The national reference laboratory collects and coordinates the received information. In case of litigation between the surveillance authority and the processor of the product the reference laboratory realises analyses of a cross-check. This will decisively contribute to final judgement. Additionally the reference laboratory is responsible for all methodical questions in the determination of extraneous water. On that score the national laboratory maintains the contact to the international counterparts and the EU reference laboratory.
The research project ensures the authorization of grading apparatuses according to EU and national law by neutral and independent institutions.
