Investigations on the influence of hunting related determinants on food safety and -hygiene of free range wild game meat

In Germany, about 1.7 million wild animals are killed per year (Gremse, 2015) in hunting practise and the meat is placed on the market as food. 55 % of the wild game consumed in Germany every year is produced in Germany by hunting (BfR, own calculations according to figures of the German hunting association 2015). The BfR has already collected basic hunting data (hit position, length of the escape route of the animal after a shot, shooting distance, wild species, age of the animal and others) based on the information given by the hunters involved in its own surveys within the scope of the project Food Safety of Game Hunting. However, the data were based on estimates. In the evaluations, later, for example, the size of the escape distance (distance in meters, which a bombarded animal from the location of the bombardment after the shot still removed) or the shot distance (distance between the location of the animal and the location of the shot in meters) were generally rounded by the estimates of the chasing persons. Whether it was rounded up or not, could not be comprehended later. Comparisons with other studies (Aebisher, 2014, Sharrak et al., 1997) suggest that there is a potential for considerable estimation errors to be quantified. Since the treatment of the game in the field is already important for food hygiene, the following, general data should be collected in the requested project: - escape distances [m] / time sequences [t] - shot removal [m] - Daytime - Daylight - light conditions when field dressing the animals to examine the internal organs - Shares of field dressing the game vs. dressing the game at a cooling station - Time events: firing / searching; Search to field dressing; field dressing to cooling - with regard to the types of hunting - Transport modes in practice - Trunk, open/closed, Hitch Rack, open / closed, trailer, open / closed - cleaning the body cavity with drinking water: In order to be able to make scientifically proven statements on the influence of cleaning the body cavity of the hunted wild animals after breaking with drinking water, microbiological investigations (determination: total germ count, enterobacteria, enterococci, lactic acid bacteria, staphylococci, listeria, pseudomonads and aeromonads, possibly bacilli) are necessary. In this case, the temperature and the pH (after breaking, during cooling (every 6 h), after cooling) should be additionally determined in order to justify the growth / non-growth of microorganisms. The aim of the pilot study is to compare the two different forms of implementation (implementation and omission of cleaning with drinking water).
